Glazed Strawberry Pie

I’ve been extremely distracted of late. So I haven’t been able to bake in a long while. (Sigh of frustration) I made this strawberry pie earlier this month, with what I think was the last strawberries of the year, but I’m only now getting around to posting about it…

This strawberry pie was super scrumptious, and not very difficult to make. It’s basically fresh strawberries mixed with jellied glaze in a pie crust. The hardest part, really, was finding the cran-raspberry concentrate. Or rather, I couldn’t find it and I used real raspberry extracts and store-bought cranberry juice. The rest was so simple, and the result was so good. The work to satisfaction ratio is quite high – I seriously don’t know why strawberry pie isn’t a thing!

Next month, I’ll be back with renewed energy for pie-making. Also, summer is here, so let the summer fruits take over! I’ve been eyeing the cherries and the berries at the supermarket for a few weeks now. Muhahahaha! Can’t wait!
